Veggie Tattie Hotpot




This version has a crumble to made with breadcrumbs and
grated hard cheese in equal quantities.
Simple tasty tattie vegetable & bean hotpot with cider and herbs.

Ingredients
tin of butter beans
onion
garlic
carrot
broccoli
potatoes
cheddar cheese
can of dry cider

Peel and slice a few large potatoes and parboil for 10 mins.

In another pan, put a splash of olive oil and stir some chopped onions until they start to go clear, add garlic, chopped carrot. Combine in a large Pyrex dish, add a tin of drained rinsed butter beans, a can of dry cider, a teaspoon of veg stock, half a cup of grated cheddar cheese, broccoli, parsley, bay leaf, thyme and seasoning. Arrange a layer of the potatoes on top and cover with foil and put in the oven for an hour at 180, after an hour uncover and put a tiny drip of melted butter on the potatoes and return to brown off some more. Enjoy with more cider and some homemade bread.



Tip - Don't throw Broccoli stalks away, slice of the skin and use the tender underneath part.
