Pork Steaks with Apple Sauce and Mustard & Cider Gravy
Stand the pork steaks or pork chops on their side in a frying pan and brown the fat a bit. Then briefly flip over and seal the meat for a minute or so. This then becomes another easy oven dish, slice some carrots lengthways and arrange the steaks on top. Mix shop bought apple sauce with a spoon of your prefered mustand and coat the steaks on one side, this keeps the chops/steaks really moist. Cover with foil and place in a preheated oven at 180 for about twenty minutes, uncover and allow to brown a bit.
Whilst thats in the oven, chop the fat off a couple of slices of bacon into tiny pieces, fry till it releases it's fat and starts to go brown then add more chopped bacon, add sliced mushrooms, fry a little bit more, add most of a can of dry cider and a teaspoon of bouillion veg stock. Taste and season and allow it to bubble away and reduce add the rest of the can if needed. I serve this gravy fairly thin, but could be thickened with flour or cream added.
Serve with two veg. The new pots shown were dug straight from the garden and are delicious steamed, but fall apart if boiled.
