The sausages we get from the farm tend to burst under a grill so I've found that you can make life a little easier and a little tastier by cooking your large sausages in the oven on a bed on onions.

Slice onions and arrange with pricked sausage and thyme as shown.Cook for a little while and turn over and drain off any fat that comes out of them. When potatoes are ready I like to mash thoroughly with butter a little milk and some whole grain mustard and season. Return to the oven with the onions on top to go a little crispy - then serve.
