American Corn Bread with Cheese and Chilli

olive oil
2 onions
Large tin of sweetcorn
4 large free-range eggs
325 g polenta
250 ml full-fat milk
1 teaspoon baking powder
6 tablespoons plain flour
140 g mature Cheddar cheese
3 green chillies from a jar
50g parmesan

Heat oven to 200

1 fry onions till brown
2 beat eggs,add polenta, milk, baking powder, flour, and mix. Add cheese and drained sweetcorn, onions and some green chillies ( I use the ones that come in a jar).
3 put mixture into a cake tin lined with grease proof paper and bake for 40 mins.
4 sprinkle parmesan over the bread and bake for a few more minutes.

Delicious hot or cold
