Baked Polenta with Cheese & Bacon
Polenta is a northern Italian stable that occasionally visits... And I must admit a bit of a guilty pleasure, Yvette a.k.a, 'Small But Dangerous' isn't a fan. But this is rather scrummy. Polenta can be either solid or sloppy as required. For solid mix as per packet and stir in a pan on a warm heat for a couple of minutes, then turn out and allow to set.
Ingredients
Grate lots of strong Cheddar
Some Parmesan grated
Bacon
As the picture shows put a layer of sliced Polenta in a Pyrex dish, add a generous helping of cheddar and some Parmesan. Arrange bacon on top and bake for twenty minutes, just before the end add some more grated Parmesan.
I have served this with basic tomato sauce and sometimes with lightly steamed Asparagus, poached eggs and flaked Parmesan. Either way a warm and hearty supper dish.
