Lentil Loaf
Ingredients
Brown or green lentils 8oz
Tin tomatoes
Herbs
3 eggs beaten
8oz Cheddar cheese grated
Garlic
Large onion
Carrot
Red Pepper
1 Rinse lentils then add to a large pan of water, add clove of garlic, a couple of bay leaves and bring to the boil then simmer for about 15 mins.
2 In a dash of olive oil fry chopped onions, garlic and peppers until they start to soften.
3 In a large bowl beat eggs, add tomatoes, combine and add lentils, mix and add some herbs - thyme, oregano and plenty of seasoning.
4 Preheat an oven to 180. Line a baking/bread tin (preferably one with sides that drop down) with grease proof paper, pour in the mixture, decorate with a few sliced tomatoes and bake for about 40mins, or until a knife slides through a bread like texture and is cooked through and caramalised on top. Allow to cool.
Great hot or cold and disappears...
