Courgette Omelette
Sometimes the simplest food is also so good. Some add mint or basil, whatever. This is a lovely dish, great served cold at a picnic. The secret is to have fresh courgettes and to fry in rounds gently until browned - about fifteen minutes.
Ingredients
Courgettes
3 or 4 Eggs
Dash of milk
Olive oil for fying
A couple of spoons of olive is all that is required, then fry the courgettes, try and make them sing. Beat the eggs, add milk and seasoning, pour over the courgettes and cook until set, then turn over and complete.
