Sous Vide Lamb Steak

Tender cuts don't need to be in water bath long.

2 hours at 55, perfect, seasoned, garlic, butter, Rosemary. Flash fried in butter and a little olive oil. Served with Italian potatoes with onion and tomatoes roasted in the air fryer. Capers and a mint sauce.

Tip if not finishing immediately then rapidly cool in ice or under the cold tap for a few minutes, then put in the fridge.
