Rustic Chicken Italian Recipe

 


Sometimes you want simple tasty food put together in moments then shoved in the oven, then served. This is it.

I love the pot in the photo above, it's used exclusively for this dish, sometimes I add Parmesan cheese click here I was going to add feta thinking Greeks must of made a chicken dish like this then changed my mind, it would work tho.

And this rustic chicken dish must be as old as the hills of Rome. As Nero played Claudius got the clay cooking pot and placed it in the fire embers with it's contents: a local hen he'd seen off, olive oil, garlic, herbs growing around the villa, a lemon from his masters tree, potatoes, wine from the vineyard. Rustic chicken, I Claudius salute you.

Method:-

Cut a chicken breast into large pieces and throw into your pot, add potatoes, add half a cup of olive oil, add three or more cloves of garlic, season, add lots of herbs; thyme, rosemary, bay leaves, add half a lemon, quartered. Mix well, add a large glass of white wine. 

Marinade for a bit if you can be bothered.

Put in oven for 45 mins at 180, then uncover add some tomatoes if you wish and cook uncovered for another 10 mins. It is meant to be quite dry, the potatoes will have absorbed all the flavours.

Your villa will smell amazing.
