Bobotie South Africa's National Dish

Bobotie pronounced ba-bour-tea is a lightly curried casserole from South Africa made with mince and fruit, finished with egg custard, When served it resembles a moussaka. Sweet, tangy and spicy it is also historic, first recorded in 1609 in the Netherlands then immigrants brought it to Cape Malay, South Africa and slaves brought in by Dutch India Trading Company. Today it is the national dish of South Africa because Bobotie is not found in any other country.

This makes a very easy and tasty quick tea. 

Ingredients:-
2 slices of white bread
1 cup of milk,
olive oil
large onion
1tblsp medium curry powder
1 teaspoon dried herbs
1 teaspoon cumin
1/2 teaspoon turmeric
2 garlic cloves
1 pound ground beef
1/3 lb sutanas
2Tblsp mango chutney
Lemon/Lime juice
4 teaspoons tomato puree
Seasoning
2 large eggs
2 bay leaves


Method
Step 1, in a bowl soak the bread with milk, leave till required.

Step2, Add the finely chopped onion into a pan and fry till clear, then add the mince and brown slightly, add garlic then a minute later the curry powders and spices, tomato puree, herbs, sultanas, mango chutney, lemon juice, season. Then squeeze out the milk from the bread (saving the milk) and tear the bread into very small pieces. Mix all together till it looks like pic. Put your oven on to 180.

Step 3 Custard Topping
Mix one beaten egg per half a mug of milk, use the milk you saved, season and poor over the mince. Add a bay leaf or two and bake for about 40 mins until golden, till it looks like the very top pic. Serve with a salad.
