Rechauffe of Pork
Rechauffe is reheating left over foods and adding other ingredients, I do this dish with left over pork as above, or beef from previous days roasts.
This recipe really works.
Peppers
Onions
Ripe Tomatoes or a tin of chopped
Garlic
White Wine
Herbs
Method
Fry onions and chopped garlic, until onions are clear, peel tomatoes (tip make a cross at the bottom of each tomato with the tip of a sharp knife, place in a jug, add boiling water and leave for a while, then the skins will easily come off).
Under the grill blacken peppers then peel off the skins, slice into strips.
Combine all in the pan add wine and simmer for a few minutes adding tomato paste or Passata if required, then add the meat and simmer away for at least twenty minutes.
