Ukrainian Chicken Soup Recipe
This one of the best chicken soup recipes and very simple to make, it's almost as clear as a consomme and garnished with spring onions and fresh dill added just prior to serving.
If you have a some chicken fillet left over then you'll have enough for this dish.
Method
In some boiling water add the chicken pieces, a chicken stock cube, a bay leaf, some ground pepper and simmer for fifteen minutes, then add a sliced carrot and sliced parsnip, simmer till they are cooked, check seasoning. Finely chop a few spring onions and fresh dill, then plate up and add spring onions and dill and serve.
Lovely, simple and elegant.
Enjoy with friends and serve with Rye bread with Polish pate and sour cucumbers, salami, gherkins and a gherkin, dill and potato salad. Oh and some Vodka straight from the freezer.
