Recipe for Classic Spanish Eggs,  Huevos a la Española Recipe, a simple, rustic dish featuring eggs served on a savory, smoky tomato and pepper sauce. It is made by sautéing onions, garlic, and green bell peppers in olive oil, adding smoked paprika and tinned tomatoes to create a thick sauce, and then frying eggs to place on top.

The Spanish like their eggs quite soft and as you can see mine, over easy was just cooked and delicious.

All you need is an onion, green pepper, tinned toms, garlic clove, tsp paprika, a little water, oh and eggs.
