How to cut up a chicken English and Spanish style

 


Off to work with a container of homemade chicken soup which has tsp of turmeric and coriander as ingredients, very good for you.

When my kids were young I always bought whole chickens and when not roasting them I cut them up and used to get three meals out of one bird and I always made stock or chicken soup or chicken chowder. I stopped doing so when the family became just us two.

Recently though in the Co-op the cost of two chicken breasts was about £5 and on the shelf below was a large chicken for £5.85 so I've gone back to buying them whole. If you've not cut one up  you'll be surprised how much chicken you get and how easy it is.

Another reason I have gone back to buying chickens whole is that I think we can't trust what manufacturers put in soup tins anymore.

So save yourself some money and eat better, below are two videos showing how to cut up a chicken, the English way and the Spanish method, in Spain they are somewhat less refined, but I prefer this method of jointing for cooking Spanish chicken stew recipes. In Spain you'd not be surprised to find a bit of bone in your dish, it may be more rustic but the chicken pieces done as the chef shows will cook evenly.
