Moroccan Soup Recipe How to make Harira Vegetarian version

 

Moroccan Soup Recipe - How to make Harira, this soup is popular in North Africa and versions include lamb or chicken, some add vermicelli pasta, sometimes it's partially blended. I think my version is a bit thick but still great, I served it as above with some yogurt but often lemon slices or boiled egg slices are added.

This recipe is vegetarian.


Ingredients

1 large onion, finely chopped
2 garlic cloves, grated
Tin tomatoes
2 tablespoons tomato paste
tin chickpeas, rinsed and drained
1 cup uncooked green lentils, soaked and rinsed
1/4 cup rice
Veg stock cube

1 teaspoon freshly ground black pepper, or to taste
1/2 teaspoon ground turmeric
1 teaspoon ground cumin
cinnamon stick
tsp cinnamon
tsp ginger

crushed red pepper flakes
1 tsp Ras El Hanout
Splodge of Harissa paste

Fry your onion till clear, add garlic, then the spices, tom puree and harissa paste, then add stock and then add the lentils and cook for ten minutes then add the rest of the ingredients, add salt and pepper towards the end, also add a little lemon juice.
