Polish Potato Salad with gherkins and dill
There's a technique to this that makes it so special - which is using the liquid from the gherkin jar. This liquid penetrates the spuds and gives the potatoes a flavour of Eastern Europe..
The German version is the same but may also include sliced apple.....
Ingredients:-
New or baby potatoes cooked and then cooled
Gherkins
Onion
Bacon
Mayonnaise mixed with some mustard and a little white wine vinegar, Polish mustard is best.
Dill
Method:-
Cook the pots, drain and leave to cool, pour over some liquid from a jar of gherkins, leave to rest for an hour or so, then drain. Mix some mayonnaise with a teaspoon of mustard and a teaspoon of white wine vinegar and add. Finely chop an onion, roughly chop a large amount of gherkins. Mix all together and add some dill,and mix. Leave to chill for a bit in the fridge.
Cook some bacon and when cooked enough to be crumbly add and mix, then add with more dill to finish.
