Minty Lamb Curry - Phoodina Lamb Curry

I've been making this curry for so many years, flavoured with cardamon, fennel seeds and mint sauce, it has an English feel. Lamb curry with mint sauce what's not to like...

Ingredients:

3/4 lb diced lamb
1 onion
Tin toms chopped
1 tbl sp ground coriander
2 tbl sp fennel seeds
2 tsp cardamon seeds, or just really bash about 10 cardamon pods and add
1 tsp chilli powder
1 tbl sp Mint sauce
1 tsp sugar
1 tsp salt

Fry onion in butter and a little olive oil, till slightly browned then add spices, fry a minute, then add toms and sugar and salt, add the lamb and a bit of water to cover. Simmer till the lamb is cooked maybe an hour and a quarter.
