Millefeuille di melanzani al pesto di pomodoro - Italian

A cold pesto sauce made from some chopped tomatoes from a tin, finely chopped garlic, roughly chopped olives, chopped chilli from a jar and some capers all mixed together and served over aubergines that have been fried till golden, with thinly sliced cheese between the layers.
