Ordering a cheese board at the Steam Packet whilst overlooking the harbour is never a chore but on this occasion the crackers were the star, I asked for the recipe and it is as follows. This was my first attempt and whilst not as good as the Steam Packet, I think they will be... Especially as a few packets of seeds from Lidl cost very lidl and there is a lot...

So:- for about fifteen crackers

20 gm flax seeds
20 gm chai seeds
5 gm nigella seeds
60 gm sunflower
8gm potato starch, can be left out, I had some, but a little starchy water from boiled potatoes may work.
2 gm salt
60 gm boiling water

Mix the above and leave for 5 mins, roll out on grease proof paper, put knife marks through so they break up easy and bake at 170 for about 20 mins or until crisp.

I don't think it would matter much what seeds you use - a small amount of cumin would be good for example as these crackers are quick, easy and worthy of further experiments.
