Avocado, Lemon, Capers, and Parmesan Dressing with Bacon, Spiced Roasted Chickpeas, Roast Chicken, and grilled Lettuce Salad Wowser!

 

This salad is a Wowser.

I'm going to admit it, I'm a Caesar salad addict. If it's on a menu, it's mine, it's my go to top salad at home, and I nail it. This tho, a creamy avocado sauce, spicy chickpeas, bacon on roasted lettuce and roast chicken is in the same space. The avocado sauce will become your go to. This salad has your new dress baby 'cos she's very very tasty..

The dressing:-

Avocado
Squirt lemon juice
1 clove garlic crushed
1 tsp of capers
1 tsp olive oil
Salt
Pepper
2 tbl sp Parmesan grated

Mix and mash all, cover with a lid or clingfilm and set aside in your fridge. If you leave the avocado stone in it's not supposed to oxidise, apparently.

Roasted Chickpeas:-

Drain and wash tinned chickpeas and mix with paprika, chilli, cumin, a little oil and then roast in air fryer for about 20 mins. Allow to cool.

Air fry some bacon and allow to cool, grill some little gem or similar lettuce until it colours on one side.

Arrange on a plate, serve and enjoy your families compliments.
