Ghivetch recipes - Bulgarian Chicken Kavarma

 

This is a lovely traditional dish from the Balkans region, the chicken and veg are fried gently then cooked or rather baked in a Guyveche dish, with little or no liquid but with herbs and spices, the result is that you can taste each individual veg as the flavours don't mix much.

Ingredients:-
Chicken fillets
Veg which can vary
Red and green peppers
Button mushrooms
Onions
Garlic
Leek
Courgette
Carrot
Tomatoes
Whole chilli(s) slightly roasted, leave in one piece but remove the seeds.

Herbs, Savoury - use Thyme
Cumin
Pepper
Paprika

So in a little olive oil gently fry your chicken and remove. Then add bite sized pieces of your veg, except the toms and fry gently to slightly soften them, Put the veg in the pot along with the chicken and any of it's juice add sliced toms, the chillis, add herbs and spices and season with salt and lots of pepper. Then bake at 160 for about an hour and a quarter.
