Caribbean Pumpkin Soup with Pork
'Whats up Soldiers! Get some Caribbean Pumpkin Soup with Pork Ya hear'. This clean tasting aromatic soup might take some flavour from the Scotch Bonnet chilli but takes no heat unless you cut it open. In Caribbean cooking beef or pork would be roasted and added to this recipe, I just added a few bits of left over roast pork.
In Caribbean food the herbs and spices seem to work together to lift the dish, each adding another layer of flavour. I would expect to find coconut milk or ginger in a similar recipe for pumpkin soup but in no recipe that I viewed at You Tube had such ingredients in this Caribbean dish.
This is a very clean tasting soup with an almost clear liquid.
Ingredients:-Pumpkin about 1lb
Onion
Garlic
Veg stock cube
Chilli
Lots of Thyme
Parsley
All spice - two
Spring onions
Grated nutmeg a pinch
Left over beef or pork
Seasoning
Add water and simmer for about an hour, it smells great.
Fish out the Thyme sprigs and the allspice berries.
Serve the soup with the chilli in it for those that like it hot.
