Sfincione di patate

So slice some potatoes, rinse and parboil for about 8 minutes, then drain. Make a lot of a really good tomato ragu with lots of onions, diced red pepper, garlic, anchovies if you have some, if not add Worcestershire sauce, some chilli flakes, tom puree, tinned toms and passata, season.

Next make the breadcrumb mixture, whizz some white bread in a food processor till fine, finely grate pecorino or gran pardarno, mix well and add salt, then add a couple of tablespoons of olive oil and mix well again.

In a large oven dish place a layer of potatoes, then cover with the ragu and slices of mozzarella and grated parmesan, then add another layer of potatoes, cover with sauce and then the breadcrumbs. Cover with foil and put it in an oven for 30 mins, then uncover and return to the oven till the breadcrumbs are golden.
