Roasted Pumpkin Soup
Yes you could do something else with pumpkins other than carve them, that's right yep, eat them and they do make an awesome soup, you could make this with a butternut squash too, but you are less likely to lose your fingers with a pumpkin. Elsewhere on this blog is pumpkin, chickpea and pear stew which I love to make in season.
So they key to this is dragging out flavour by roasting the onions, garlic and pumpkin, add these to a pan along with a good quality chicken stock, a half teaspoon of ginger powder, a half teaspoon of garam marsala, and a small tin of coconut milk. Combine simmer and then blend when all veg is cooked till soft, then check seasoning, simmer for a few minutes more and serve.
