American Goulash

 


Not to be confused with proper Hungarian goulash this rather wonderful dish makes a great change from a Bolognese, and is a belly filler for all the family.

So in a large pan add a chopped onion, fry for a few minutes and then add your minced beef and break it up, keep stirring till the meat is browned and any liquid has dried up, then add crushed garlic, paprika, cayenne, pepper, marjoram or oregano, a couple of bay leaves and stir. Then add a tin of toms, passatta, chicken stock. And simmer for about half an hour. Then add some macaroni or other short small pasta and continue to simmer until cooked. Check seasoning, and then stir in a generous amount of grated cheddar, leave it for five minutes. Then serve to your family and offer more grated cheese, as they look at you with new found adulation.
