Lyonnaise Salad

 

Okay so a sort of breakfast meets a salad? Yep, why? Cos it's awesome, I love Caesar but this is really simple but delicious... Poached egg, hot crispy bacon, rocket with a fab dressing made with olive oil, dijon mustard, lemon juice, white wine vinegar, finely chopped shallot. 

Dressing Tip - Put ingredients in a bowl, except the olive oil and mix with a whisk, then slowly add the olive oil whilst whisking, this way the dressing will become thicker as it emulsifies and won't separate quickly.

Above served with parmesan crostini, and some sauteed potatoes.
