Cider Corned Beef Stew


This ticks the boxes for a tasty tea, I love cooking with cider and this method - frying the cabbage gives a great result.


So start with a chopped onion and fry till going clear in a little olive oil and some butter, add diced carrots and parsnips, add chopped cabbage and keep it moving, add some halved baby potatoes and keep stirring for another five minutes. Add a can of cider, some mustard, a veg stock cube, tomato puree and season. Let it simmer for a few minutes then add the corned beef and simmer till all is cooked through.
