Butternut Squash, Pasta and Cheese Bake
Wanna feed one of those vegetable only peeps without upsetting the sausage eaters? Got one of those weird squash things lurking? Got some of that Greek Pasta that looks like rice, that you've bought and never used? Feta too? Then you're a top banana, that Veggie person will say and the others will nod and ask for more. And you can explain how cutting the Butternut Squash without losing a finger is worthy of a mention on your cv.
Okay so in a little oil fry the onion till transluscent and do it slowly on a low heat, then add sliced garlic - you don't want it to burn, the tomatoes chopped, the sage leaves, add chopped up bite sized pieces of squash, stir around for a few minutes then put in a pyrex dish, add a mugful of that pasta stuff, and cubes of feta, and a cup full of grated Parmesan, season, mix, add about a litre of veg stock, I used chicken but then I eat sausages. You may need to add some more stock if it dries out too much. Bake in the oven till golden brown and cheesey umptious about thirty minutes.
