Butternet Squash & Coconut Milk Soup


This is a really simple yet lovely unusual soup is just at home as a quick lunch or as a posh starter.

Okay, finely chopped onion carefully fried in a little butter and oil, till transluscent not brown. Chop a butternut squash into bits and add to the onion, add a teaspoon of ginger powder and stir, pour over chicken or veggie stock, simmer until the butternut squash is soft. Blend, then add a tin of coconut milk and stir to incorporate, return to a moderate heat, check for seasoning and serve.
