Polenta Baked with Tomato Sauce and Cheese (V)


Polenta is what McDonalds make their chips (sorry) fries from. It's great stuff once you get to kind of understand it. Served wet as a sort of mash for a stew, or thicker and allowed to set, and then sliced and slices grilled with cheese on top for example. Or baked as in this recipe. It can have extra flavours added to it, in this one I chopped some fresh Rosemary into it - next time I'll put in even more in.

Follow the instructions on the Polenta packet. Layer Mozzerella with tomato sauce and Parmesan to finish, twenty minutes at 180 in the oven should do it.

This recipe would be great with grilled sausages and some lovely fresh bread.
