Italian Fried Chicken with Pasta, White Wine and Peppers


Another amazingly super quick, super supper dish, normally served with spinich too. Next time.

Ingredients

Pasta
Chicken Fillets
Garlic
Flour
Pepper
White Wine
Creme Fresh/Cream
Parmesan

Method

Put your oven on to 180 and the kettle on for water to boil your pasta. Melt a little butter in a frying pan. 

Bash your chicken fillets a little to squash them out a bit. Dredge them through the seasoned flour and fry gently on either side until browned for about three or four minutes per side. Put them in the warm oven (10 mins only). Add a little more oil and add chopped garlic and then the thinly sliced red pepper, stir.

After five mins add a large glass of white wine - simmer for a minute or two until the wine starts to reduce, add a ladle of water from the pasta, some parmesan and some cream, mix and add your cooked, drained pasta to the sauce, place the chicken on top and add some more parmesan and serve.
