Vegetarian Enchiladas


Simple and yummy these Enchiladas make a quick and easy supper dish, I make several versions these are with sweetcorn but Spinach and Feta filling is awesome too.

Ingredients

Tortilla kit
Onion
Garlic
1 Sweet Potato
Butternut Squash
Butter Beans
Sweet Corn
Passata
Cheddar
Jalapenos from a jar

Method

Fry chopped onion and garlic. Peel and cut sweet potato into small chunks and steam until softened, grate some butternut squash add to the onions, add the spice mix that comes with the kit and stir around for a few minutes. In a large mixing bowl put in drained butter beans, sweet potato and the contents of the frying pan. Mash roughly.

Heat oven to 180. In a large baking dish wet the bottom with a little passata, Place your first tortilla in it and spoon some of the mixture into it. Add some sweetcorn and jalapenos, roll up and repeat with the others, pour over some more passata and grate cheese over. Cover with foil (uncover five mins before serving) takes about twenty five minutes.
