Corney Pie


Fancy a change to Cottage Pie? Try a Corned Beef version.. Just great served with pickles.

Method, make lots of mash, make some mashed carrots, slice two onions into rings and gently soften in a little oil and a dab of butter. Put some frozen peas into a pan and simmer for a minute or two. Find some chutney lurking at the back of the cupboard,

Slice the Corned Beef and lay in a large flat baking dish, add a little water a splash of Worcestershire Sauce then cover with a layer of onions and spread some chutney over most of it. Add peas, then a layer of mashed carrot and then the mashed potato. Decorate with a couple of half tomatoes and bake at 180 for about thirty minutes. Enjoy.
