Chicken with Black Olives


I made this recently for the first time since my father passed away, it was a dish that he really enjoyed as he really loved black olives. I was very pleased to make it for him.

As most things I make its easy, quick and tasty.

Simply fry chopped onions with garlic in a little Olive Oil (I used leeks and Mushrooms on this occasion) add Chicken Fillet pieces and brown quickly, chuck in a tin of Chopped Tomatoes, and Olives (the garlicky the better) and season and simmer for twenty minutes or so. Great served with some fresh chunky bread.
