Mexican Mac and Cheese Recipe
This dish of mac and cheese is not made in the usual way at all, this is a quick and quirky one pan recipe from Mexico.
Ingredients:-
Macaroni
Onion 1/4
Garlic 2 cloves
Chilli fresh to taste
2 Tblsp Tom Puree
1tsp Cumin
Seasoning
Half tin toms
Chicken stock cube
Cheddar about half a block
Water
In a little hot oil fry your macaroni for a couple of minutes.
In a blender or with a liquidiser blitz thoroughly the remainder ingredients retaining 1/4 of the cheese and add to the pasta.
Bring to a simmer and stir now and again for about fifteen minutes, then add the rest of the cheese in cubes, stir and mix in. Adjust seasoning and when the macaroni is cooked but still has a bit of bite, serve.Weird recipe but it works well.
