Mauritius Magic Bowl Recipe - Bol Renversé

 

Wonder bowl or magic bowl (Bol renverse - upside down bowl) is dish from Mauritius made with a stir fried sauce similar to chop suey with vegetables and chicken, on rice and topped with a fried egg.

Mauritius is an island off Madagascar in the Indian Ocean the population derives from India and China.

This is a stir fry that's served in a normal breakfast or soup bowl - so all veg and chicken needs to be cut into small pieces. The pak choi can be larger but be quick with it at the end as it disappears in a stir fry.

You'll need:-

Chicken fillets
Carrot
Onion
Baby sweetcorn
Mushrooms
Pak Choi
Half a pepper
Ginger grated
Garlic 2 cloves
Black pepper, salt

Optional chillies

Chicken marinade made from:-

Shaosing whisky tbls
Rice vinegar tbls
Rice wine tbls
Salt

Sauce:-
Oyster sauce
Dark soy sauce
Water

tbls cornflour mixed with water

Rice
Spring onion
Fried egg per person
Steps


Marinate the chicken for at least ten mins.
Put some rice on, this dish is ready very quickly, and stir fries are all about prep, so get to it. Prep all your veg.

Heat oil and add ginger and garlic, when garlic turns brown remove it. Stir fry chicken till cooked, (reserve any left over marinade) remove. Stir fry all veg, put hardest veg in first like carrots. Re add chicken, add pak choi, add sauce and any marinade, add a little cornflour to thicken, then add some spring onions and fresh chilli if liked.

Fry eggs, they want to be quite cooked and hard.

Assemble by putting an egg in the bowl then the chop suey then rice on top.

Serve the bowl, and let your family enjoy putting their plate over it and turning it over to reveal the magic.
