How to make polenta like an Italian
I love polenta you can serve it soft like mashed potatoes with a stew see recipe here or bake it with bacon and finish with a sauce see recipe here and the pic below. Or do what I do, make too much, have it baked and then another day slice into chips, spray with oil and bake in an air fryer for fifteen mins or so.
Ingredients and method
The ratio is 1 cup of polenta to 4 cups of water, this will make as much as the pyrex dish pic below. Follow the instructions on your packet but you'll also need half an ounce of grated Parmesan and a cup of strong cheddar ready, I also very finely chop some Rosemary, polenta doesn't have much flavour so you have to add it.
Add the polenta to the boiling water, add the other ingredients and mix with a small whisk, turn the heat down, it will bubble and complain but keep at it, again based on the packet. Don't be tempted to add more polenta or it will become stiff and stodgy. It wants to be quite light and fluffy.
Pour it out and use as soft mash with a stew or pour into a dish and add bacon and bake or wait till it's set and cut into chips and finish with some oil and some salt and bake in the air fryer until brown and crunch.

McDonalds make their fries with polenta, these are better.
