Miso, Cep Mushrooms, Maple Syrup and Beer Braised Steak

This makes a usual already great braised steak recipe unusual and rather special, maple syrup and miso in a stew, yep, and it's great.

Let me explain this fab recipe. A couple of tips and then the ingredients:-
Look at the steak, that's what browned meat should look like, it should have almost a crust, this seals the flavour in and adds flavour to the stew. If you are organised enough to have dried ceps soak them in boiling water first, before you start anything. Garlic is added in any dish in this method, it's just fried for a minute, throw it in with your herbs, get those flavours into the sauce, but don't burn the garlic. Using an acid like a vinegar lifts flavour and I prefer rice vinegar over any other.

So first fry onions and add carrots stir until the onions are softened and started to go golden, remove, add the steak which has been dredged in seasoned flour, add herbs and garlic, add back in the onions and carrots, add the mushrooms and their water, a teaspoon of miso, a good squirt of maple syrup, beef stock, beer, and a dash of vinegar, bring to a simmer and then put together in a slow cooker. Leave the house, go to work, smile as you return home, knowing something great awaits. Serve with mustard mash and some green veg.

Assemble your family and if you have teenagers, demand they leave any mobile device elsewhere and say as they eat (at a table):-

'OMG dope level wiv dis lit concoction like innit? TBH it's GOAT, if der Co-op offers sic steak for less cheddar I feed my fam periodt.'. There you are - do this and you are down with the kids, who says you can't talk to the youth of today.
