Chickpea, Pasta Soup
This humble soup is one you may crave whatever the weather.
Heat olive oil in a large pan add a diced onion, diced carrot, diced parsnip and fry till the onion is translucent, add oregano, garlic and then add 2 tbl spoons of soy sauce, throw in a tin of chickpeas, thyme, a glass of white wine and lots of parsley, add a mug or two of veg stock and simmer for five minutes. Then add some lemon juice and season, then add some broken up pieces of tagliatelle, simmer till the pasta is cooked.
