Spanish Stew with Pork & Chorizo


Pork & chorizo slow cooker dish with olives and chickpeas in a fab tomato sauce, yes serve it with a lump of artisan bread and a glass of Rioja, and you are the Don Juan of your cooking pan.

Pimples to put together the night before, just fry off some diced onions, add garlic, then diced pork and brown a little, add a glass of white wine and bubble for a minute, then chuck in lots of diced chorizo, tinned toms, some tomato paste, chicken stock, a tin of chickpeas, drained and washed and some olives, bring to a simmer, season and switch off. 

Switch back on before leaving for the wasp factory and enjoy on your return, with that bottle of Rioja.
