Quince Compote - Cotogne in Composta


Quince is a lovely autumn fruit that is seldom found but makes the most delicious jelly or compote preserve to be served with cheese or meats or game.

This is a very simple recipe that you should do if you find quinces.

Peel the Quince and put it's peel in a pan and the core, cut the rest of the Quince into strips and add 4oz sugar, lemon rind and all of it's juice, a few cloves, a teaspoon of ground cinnamon and water to cover.

Simmer for about an hour - until the slices are soft. Then remove the core and when cooled put it all in a jar, it will keep for a while, but only if you forget about it.
