Apricots, chickpeas and pumpkin Tagine
Apricots with just about anything work, they bring 'Amore' to any casserole. This is so easy and so lovely.
Genly fry your onions and garlic in a frying pan, add slices of a red pepper and carrot, when all is softened, add garam masala, cumin, a cinnamon stick, grated ginger and powdered ginger. Keep frying a bit more. Add a tin of tomatoes, drained and washed chick peas, and the dried apricots. Bubble for a bit then transfer to your tagine and put in the oven for an hour or so.
