Lemon Granita


There's nothing as refreshing on a hot day than a Lemon Granita, and nothing is as easy to make as this. An expresso coffee version, made in the same method is also great.

Set two mugs of water to boil, add a quarter of a mug of sugar and bring to a boil whilst stirring to desolve the sugar. Allow to cool and pour into a container.

Grate the zest of a large lemon, then squeeze out as much lemon juice as possible. Tip - if you put a citrus fruit in a microwave for 30 seconds or more you get more juice out of it. Add the zest and juice to the liquid.

Put it in a freezer, and when frozen, and when you want it blitz it in a food processor until it appears as ice crystals. Enjoy
