Leek and Potato Soup

Chop an onion and your leeks, add a knob of butter to a large pan, add the onions and the leeks. Now this is were you get much more flavour, keep them cooking in the butter without browning, without frying, just cooking on the lowest heat until really softened. You don't want them to colour, keep them moving, may be a while.

Peel and chop your potatoes and rinse them in cold water. Always do this, it removes the surface starch.

Add the drained potatoes to the leeks and stir around for a minute, add chicken stock, bay leaves, and parsley, season. Simmer gently. Always put a piece of greaseproof paper over your soup pan under the lid. This seems to keep in more evaporating liquid and flavour.

When ready remove the bay leaves and allow to cool a bit, blend, serve with some chopped chives and some cheese on toast. Yum
