Grilled Chicken Ceasar Salad

I prefer to marinate the chicken pieces in lemon juice, a little garlic and olive oil over night.

Anyway make some croutons, a little, just a couple of tablespoons of olive oil on a heated baking tray, then when the oil is hot add bread cubes and turn over after 10 mins for another few minutes. Make more than you think you need.

Dressing: mayonaise, Worcester sauce, french mustard, lemon juice, olive oil, garlic, salt, finely grated Parmesan. Mix and add more lemon juice to get the creamy consistency.

In  a large mixing bowl add your crisp lettuce, add some of the dressing and mix it up.

Get the griddle pan out and without any oil add a couple of slices of bacon, and cook till crisp, set aside. Then add your chicken pieces - about four mins each side, until browned.

Arrange your lettuce on a plate, add bacon pieces, croutons and chicken, sprinkle with more Parmsan, add more dressing and serve.
