Pasta all' Amatriciana


I've made versions of this dish for what feels like forever, some with lots of chilli and no cream, but this is the best version of Amatriciana with Pasta - this is very close to the one I enjoy at a local Italian restuarant, so moreish. Yes, so much comfort food.

Ingredients

Bacon
Onion
Dried Chilli
Chopped Toms
Mushrooms
Tomato Puree
Seasoning
Cream
Parmesan/Pecorino

Pasta of your choice - with this I prefer Tortellini.

Method

In a dab of olive oil fry chopped bacon until slightly browned, set aside. Slice the onions into rings and add to the pan with the garlic and fry, until starting to clear but not quite, then add the chilli. Then add the tin of toms and a tablespoon or two of puree and some water, and the sliced mushrooms, simmer for 15 mins. Then add the bacon and simmer for another minute or two, then turn off the heat and move the pan from the heat and a few minutes later add grated cheese and half a cup of cream and stir and season.

Meanwhile cook your pasta.

Add your cooked Pasta to the sauce, stir and serve with extra cheese.
