Fakes Soupa - Greek Lentil Soup (V)
A Greek Soup; hearty, healthy and filling, the ingredients vary slightly depending on what needs using up but it's simple, cheap and quick. This soup has a large amount of olive oil which contributes to it's Mediteranean flavour.
Method, boil the lentils (green) in enough water to cover them for three minutes then drain. Then chop up the remaining veg, add everything to the pan with the lentils in, and cover, then simmer in about a litre of water until all is cooked - about thirty to forty minutes.
