Venezuelan creamy chicken soup with cheese recipe - Chupe de Pollo is a Latin American soup that I'm already looking forward to making again, chicken, potatoes, peppers and sweetcorn, the broth finished with cream over pieces of chicken and cheese stacked up, delicious... It may be served topped with slices of avocado and chopped fresh coriander, even better, some corn bread or aranas (recipe to follow) and you'll have a fantastic meal.

I found this recipe from a search as I had a very large bunch of fresh coriander to use up and a chicken carcass and wondered what other soups other than Thai used it in stock.

Ingredients;

Chicken pieces, or carcass
Coriander fresh bunch
Onions/leek
Carrot
Pepper
Sweetcorn frozen or a tin
Sweetcorn cobs
Garlic
Cheese, Mozzarella, Paneer, Mild white Cheddar

Stock
Chicken legs/thighs or a carcass, any left over chicken that's cooked - put to one side.
Big bunch of fresh coriander including stalks
Carrot
Leek or Onion
Garlic

Bring you stock to a simmer for an hour, take chicken off legs/thighs and put to one side. Drain your stock reserving the liquid, you should have a fairly clear broth. As picture

Soup
Gently fry a finely chopped onion and a pepper (green preferably) till softened, then add some potatoes cooked into cubes, bay leaf, stock and set to simmer for about twenty minutes then add a cup of sweetcorn and some sweetcorn cobs about 4 cm thick cook for another ten minutes.

To serve
Cut your reserved chicken into small pieces or shred it and place servings in each bowl, add small cubes of a plain white cheese like mozzarella then pour over the soap and then just before taking to the table add a little cream.
