Tortellini in Brodo recipe - easy version

Tortellini in Brodo translates as tortellini in a broth, the broth should be as similar to a really good consomme, this recipe elevates a humble stock pot to make dish that's good enough for an easy supper.

At home we are unlikely to make our own stock but we can improve a chicken stock pot, so to a pan of water add the stock pot, a diced onion, a sprig of thyme, a chopped carrot, a bay leaf, a Parmesan rind if you have one, a few peppercorns, and anything else that needs using; spring onions etc and simmer for half an hour. Then remove the veg etc, season well and add your tortellini and simmer for a couple of minutes less than the pack advises. I added a couple of halved cherry toms also at this point.

Add a tablespoon of Parmesan and stir and you should have perfectly cooked tortellini swimming in flavourful soup.
