Lomo Saltado Peru Chifa Cuisine - A Chinese and Peruvian Dish
Lomo Saltado is a dish from Peru, in fact it's the Peruvian national dish, consisting of stir fried beef with onions, tomatoes, chips and chilli paste traditionally served with rice, it is a 'Chifa' meal which is a mix of Cantonese/Chinese and Peruvian cuisine served in Chifa restaurants or as street food.
I had been told about this recipe and then noticed the Co-op had a deal on for two small steaks and two tubs of home fries for £4 and set to cooking..
So this is it really - just cut your steak into strips, add a dash of dark soy, rice wine vinegar, we can't buy aji amarillo paste in Cumbria so I used chilli paste, chop some toms, slice some onions and peppers,
Put some chips in your airfryer.
Stir fry your beef with onions, peppers and tomatoes
Combine, add more soy sauce and add spring onions.
Add chopped coriander if you have some.
